Couscous with Guedid (special meal of Ashura)

Preparation Time: 30 minutes /Cook Time: 40 minutes

Couscous Ingredients

-2 cups of couscous

-4 or 6 cups water

-1 teaspoon salt

-2 knobs of butter (Moroccans use special butter called smen lbeldi).

 

 

 

 


Guedid Ingredients

Medium pieces of meat from Eid Al-Adha seasoned with spices (Grain of parsley +olive oil+ 2 teaspoons salt) dried in the sun and saved in the fridge.

Sauce

Put the meat in the pot after defrosting. Add one onion cut in small pieces with 6 teaspoons of olive oil and some special spices (1 teaspoon of salt + 1 teaspoon of pepper+ 1teaspoon ginger + a little food-colouring).  Wash and drain a cup of chickpeas soaked in water overnight. Add it to all these ingredients with a liter of water and keep it until boiling.

Peel the vegetables ( in Morocco, people used to prepare couscous with 7 vegetables, that we call sbaa khdari) : 2 zucchini + a head of cabbage divided in two parts + 1/4 of winter squash + 1 aubergine (eggplant) + 4 Turnip (2 kinds of turnips, white and yellow) + 6 Carrots. Wash these vegetables thoroughly (at least 3 times), cut them in pieces and add them to the boiling sauce. Add the zucchini, winter squash and aubergine (eggplant) after 20 minutes. If needed, add some water to the sauce.

Prepartion of couscous

To make the couscous, pour the dry grains into a dish and add water (1/2 cup). After the couscous has absorbed the water, put it in a special dish for cooking couscous (keskass). First, steam it for 20 minutes. Then put the couscous in a big dish and add water (2 cups) and stir.  Let it absorb the water. After that, steam the couscous again for 10 minutes. Repeat this operation once again but add salt (1 teaspoon) to the couscous then stir it and steam it for 10 minutes.

When it’s time to serve, put the couscous in a special dish called a kasria, then add 2 knobs of butter to it and stir until the butter has melted. Finally, carefully place pieces of meat and vegetables on the couscous and add a little of sauce (make sure to create a good presentation of your couscous).
